🥣 Ingredients:
150g | 1cup cooked chickpeas
14oz | 400g | 2 medium size potatoes
1 onion
2tbsp chickpea flour
1tsp dried herbs
salt
1 tomato
1tbsp tomato sauce
🥣 Sauce ingredients:
40g | 1 1/2 cup basil
30g | 1/4 cup sunflower seeds
3tbsp nutritional yeast
2 garlic cloves
salt to taste
60ml | 1/4 cup water
2tbsp lemon juice
2tbsp olive oil
🧑🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗Instead of “basil pesto” sauce you can have it with dairy-free yoghurt
🥣 Method:
Mash 150g | 1 cup cooked chickpeas.
Peel and grate 14oz | 400g | 2 medium size potatoes.
Squeeze the liquid of grated potatoes.
Grate 1 onion.
Add 2tbsp chickpea flour, 1tsp dried herbs and pinch of salt.
Mix until combine.
Heat a little olive oil in a non stick skillet and add the mixture.
In a mixing jar combine 40g | 1 1/2 cup basil.
30g | 1/4 cup sunflower seeds.
3tbsp nutritional yeast.
2 garlic cloves.
salt to taste.
60ml | 1/4 cup water.
2tbsp lemon juice.
2tbsp olive oil.
Flip to other side and spread with 1 tbsp tomato sauce.
Slice 1 tomato.
Place over the top.
Spread basil pesto.
Add some dairy-free cheese.
Cook with the lid on for about 5 minutes.
